Grampians Riesling 2016
Whole bunch pressed, cold settled overnight, fermented in stainless steel followed by extended lees contact in tank. 8g/litre residual sugar, lime juice, zesty, delicious summer drinking!
Coonawarra Cabernet Sauvignon 2014
Fruit destemmed, open fermented in small one tonne vats, hand plunged, extended maceration for 20 days, basket pressed, matured in French oak barriques for 15 months, followed by egg white fining and filtration prior to bottling. 14% abv
Grampians Shiraz 2015
Fruit destemmed, with 20% left as whole clusters- open fermented in small one tonne vats, hand plunged, extended maceration for 20 days, basket pressed, matured in French oak barriques for 16 months, followed by egg white fining and filtration prior to bottling. 14% abv
Grampians Rose 2016
Juice was bled ‘saignee’ from a Shiraz ferment to cold settle overnight, racked to French oak for natural fermentation, lees stirred, six months maturation, followed by light filtration prior to bottling. 12% abv.
